28 ounces whole tomatoes
28 ounces crushed tomatoes
6 ounces tomato paste

1 cup quinoa
2 cans beans

Instructions

1.Heat the olive oil in a large pot over medium heat.
2.Add the onion, cubanelle pepper, green pepper, red peppers, baby carrots, garlic, mushrooms, and jalapenos. Cook until the vegetables start to soften, about 10 minutes.
3.Add the cumin, chili powder, cayenne pepper, cinnamon, oregano, basil, mustard powder, and paprika. Cook for 2-3 minutes, stirring constantly.
4.Add the stout beer, whole tomatoes, crushed tomatoes, tomato paste, and cocoa powder. Stir to combine.
5.Add the quinoa and beans. Stir to combine.
6.Add enough water to cover all the ingredients in the pot. Bring to a boil.
7.Reduce the heat and simmer for 1-2 hours, stirring occasionally, until the chili has thickened and the flavors have melded together.
8.Serve hot with your favorite toppings, such as avocado, cilantro, and vegan sour cream.
