4 lbs boneless sirloin tip roast
1 tablespoon coarse sea salt
2 tablespoons crushed black peppercorns
3 tablespoons parsley , finely chopped
2 tablespoons fresh thyme , finely chopped
1 teaspoon fresh thyme , finely chopped
3 garlic cloves , crushed
1/3 cup grain vodka ( I used aquavit )
1/4 cup olive oil
2 tablespoons vegetable oil
4 tablespoons unsalted butter

Instructions

1.Combine sea salt, crushed black peppercorns, parsley, thyme, garlic, vodka, olive oil and vegetable oil in a bowl.
2.Place the sirloin tip roast in a large resealable plastic bag and pour the marinade over the roast.
3.Seal the bag and marinate in the refrigerator for at least 12 hours or overnight.
4.Preheat your oven to 300°F (150°C).
5.Remove the sirloin tip roast from the marinade and discard the marinade.
6.Heat a skillet over medium-high heat and add unsalted butter.
7.Sear the roast on all sides until browned for 3-4 minutes per side.
8.Transfer the roast to a baking dish and bake in the preheated oven until the internal temperature of the meat reaches 135°F (57°C) for medium-rare or 145°F (63°C) for medium, usually takes about 1 to 1 1/2 hours.
9.Rest the roast for 10-15 minutes before slicing. Enjoy!
