1 lb chicken ( legs & thighs )
1 teaspoon light brown sugar
1/2 cup low sodium soy sauce
3/4 cup rice vinegar
1 bulb of garlic , crushed
4 bay leaves
1/2 teaspoon peppercorn

Instructions

1.In a pot or a heavy skillet, place the chicken, soy sauce, vinegar, garlic, bay leaves, brown sugar, and peppercorn. Mix well.
2.Cover the pot and bring it to a boil over medium-high heat. Lower heat and let it simmer for 30-40 minutes, or until the chicken is cooked and tender.
3.Remove the chicken from the pot and set aside. Discard the bay leaves and peppercorns. Deglaze the pot by scraping off the brown bits and simmer the remaining sauce for 5-10 minutes until it thickens.
4.Pour the sauce over the chicken and serve with rice.
