Ingredients

1 box brownie mix ( OR homemade brownies , use a springform pan with removeable sides )
1 cup chopped Andes mints candies or 1 cup after dinner mints
6 eggs , separated
3/4 cup heavy cream
1 cup semi-sweet chocolate chips
1/4 cup half-and-half
1 package Andes mints candies or 1 package after dinner mints
1 cup chopped Andes mints candies or 1 cup After Eight after dinner mints
1 cup semi-sweet chocolate chips
This Andes Brownie-Mint Pie is the perfect dessert for a chilly evening. Instructions

1.Preheat your oven to 350F.
2.Chop a cup of Andes mints candies or After Eight after dinner mints and set aside.
3.In a mixing bowl, beat the egg yolks until they thicken.
4.Melt 1 cup of semi-sweet chocolate chips using a double boiler and add it to the egg yolks, mixing well.
5.Whip the heavy cream until it's thick and mix it with the melted chocolate and egg mixture.
6.In a separate bowl, beat the egg whites until they form soft peaks.
7.Fold the egg whites into the chocolate mixture in three parts until just combined.
8.Pour half of the chocolate mixture into a prepared springform pan and sprinkle the chopped Andes mints candies or After Eight after dinner mints on top of the chocolate mixture.
9.Cover the Andes mints candies with the remaining chocolate mixture and smooth out the top of the pie.
10.Bake the pie for 30-35 minutes or until the edges are set.
11.Melt 1 package of Andes mints candies or After Eight after dinner mints and 1/4 cup of half-and-half together in a small pot.
12.Pour the melted Andes mints or After Eight after dinner mints mix over the pie and sprinkle with the remaining cup of chopped Andes mints candies or After Eight after dinner mints.
13.Chill the pie in the fridge for at least 2 hours before serving.
