Instructions

1.In a large frying pan, sauté cooked ham slices in olive oil or butter over medium heat for about 2 minutes.

3.Add finely chopped onion and stir for a minute, then add good stock to the pan.
4.Add chopped tomatoes and continental-type sausage, cover and cook until the vegetables are tender, for about 10 minutes.
5.Add cooked peas and asparagus tips and allow the flavors to blend for a minute.
6.Create small wells in the vegetable mixture and crack an egg into each. Cover and cook until the eggs set, for about 5-7 minutes. Serve hot on plates.
