Ingredients

500 500 g lean lamb fillets or 500 g lean pork fillets
8 pre-soaked wooden skewers , about 15cm long , OR
4 metal skewers , about 25cm long
1/2 teaspoon coriander seed , roughly ground
1/2 teaspoon cumin seed , roughly ground
1/2 teaspoon fennel seed , roughly ground
1 -2 teaspoon sweet smoked paprika ( Pimenton )
2 garlic cloves , peeled and crushed with
1/2 teaspoon salt
1 pinch saffron , infused with
2 tablespoons boiling water
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
1 bay leaf , crumbled
2 teaspoons sherry wine vinegar or 2 teaspoons wine vinegar
2 teaspoons olive oil
chopped flat leaf parsley ( Cilantro ) or chopped coriander ( Cilantro )
Andalucian Pinchitos Morunos, or Moorish Saffron Meat Skewers, are a popular dish in the cuisine of southern Spain. Instructions

1.Cut meat into small, even-sized chunks and thread onto skewers.
2.Combine the coriander, cumin, fennel, and paprika in a bowl.
3.In a separate bowl, mix the garlic, saffron, oregano, bay leaf, vinegar, and olive oil together.
4.Pour the garlic mixture over the meat skewers, making sure each piece is covered.
5.Let the marinated meat sit for at least 1 hour, or preferably overnight in the fridge.
6.Preheat the grill or barbecue to medium-high heat.
7.Cook the skewers until the meat is tender and cooked through, about 8-10 minutes, turning occasionally.
8.Garnish with chopped parsley or coriander before serving.
