Ingredients

8 sun-dried tomatoes packed in oil , well drained
7 -8 anchovy fillets
4 garlic cloves
1 medium tomatoes , fresh , chopped
salt & pepper
6 drops hot sauce ( Peri-Peri Tabasco , your favorite )
6 teaspoons asiago cheese or 6 teaspoons parmesan cheese , grated
3 tablespoons lite olive oil
3 tablespoons lite olive oil or 3 tablespoons virgin olive oil
Anchovy & Sun-Dried Tomato Bruschetta is a classic Italian dish that is quick, easy, and delicious. Instructions

1.Preheat the oven to 175°C (350°F).
2.Place the sun-dried tomatoes, anchovy fillets, garlic cloves, chopped fresh tomato, salt & pepper, hot sauce, grated asiago cheese, and 3 tablespoons of lite olive oil in a food processor and pulse until finely chopped.
3.Brush the remaining 3 tablespoons of olive oil over the bread slices, then spread the tomato and anchovy mixture generously over the bread slices.
4.Bake the bruschetta for 10-15 minutes, or until golden brown and crisp.
