1/2 jalapeno pepper , seeded and chopped
1/2 cup cream cheese , softened
1/2 cup sour cream
1/4 cup chicken stock
1 tablespoon olive oil
1/2 teaspoon ground cumin
salt and pepper to taste

Instructions

1.Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2.In a small bowl, toss the ancho chiles and garlic cloves with 1 tablespoon of olive oil, making sure they are fully coated. Place on the prepared baking sheet and roast for 10-12 minutes, until softened and slightly charred.
3.Remove from oven and let cool. Peel the garlic cloves.
4.In a large mixing bowl, whisk together eggs, flour, and salt until the mixture forms a shaggy dough. Knead the dough on a floured surface until it's smooth and elastic, about 8-10 minutes. Cover with a towel and let rest for 20-30 minutes.

6.Roll out the pasta dough into thin sheets and cut into desired width of fettuccini. Boil in salted water until al dente for about 3-4 minutes.
7.Drain the pasta and toss with the cilantro-tomatillo cream sauce. Season with salt and pepper to taste.
