Ingredients

6 large ancho chilies
2 lbs ground beef
1 lb sweet Italian sausage
3 garlic cloves , minced
1 large sweet onion , chopped
1 can diced green chilies
1 can sliced mushrooms
1 can diced tomatoes
1 can tomato sauce
1 cup beer ( lager or amber )
2 teaspoons salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 teaspoon Mexican oregano
3 tablespoons hot chili powder
2 cans light kidney beans , undrained
Ancho Beer Chili is a variation of traditional chili that incorporates beer and ancho chilies for a unique flavor experience. Instructions

1.Preheat the oven to 325°F.

4.Add the garlic and onion, and cook until the onion is translucent.
5.Stir in the green chilies, mushrooms, tomatoes, tomato sauce, beer, salt, pepper, cumin, cayenne pepper, oregano, and chili powder.
6.Add the ancho chilies to the pot, making sure they are covered by the liquid.
7.Cover the pot and transfer it to the oven. Cook for 2 1/2 to 3 hours, until the meat is tender.
8.Remove the chili from the oven and let it cool for 10-15 minutes before serving. Serve with a dollop of sour cream and shredded cheese, if desired.
