Instructions

1.In a measuring cup, combine 1/4 cup warm water with yeast and sugar.
2.In a large mixing bowl, whisk together all-purpose flour, bread flour, vital wheat gluten (if using), and salt.
3.Pour remaining 1 1/2 cups warm water and onion juice into the bowl of a stand mixer fitted with a dough hook attachment.
4.Add the yeast mixture and whisk together.
5.Gradually add the flour mixture to the mixing bowl, mixing on low speed until the dough comes together.
6.Continue to knead for about 8-10 minutes until the dough is smooth and elastic.
7.Put the dough into an oiled bowl and cover it with a kitchen towel or plastic wrap.
8.Let the dough rise in a warm, draft-free place for about 1 hour or until it has doubled in size.
9.To make the filling, heat vegetable oil in a skillet over medium heat.
10.Add minced onion and cook for about 5 minutes or until the onion has softened and browned slightly.
11.Remove from heat and stir in poppy seeds and kosher salt.
12.Punch down dough and divide it into 16 equal pieces.
13.Roll each piece into a ball and place on a floured surface.
14.Cover with a kitchen towel and let rest for 10-15 minutes.
15.Preheat oven to 425°F (218°C) and line a baking sheet with parchment paper or spray with nonstick cooking spray.
16.Dust a rolling pin with flour and flatten each dough ball into a 3-inch (7.6 cm) circle, leaving the outer edge slightly thicker than the center.
17.Place flattened dough rounds on the prepared baking sheet.
18.Use your fingers to make a depression in the center of each round.
19.Fill each depression with a teaspoon of filling and sprinkle cornmeal over the top.
20.Bake for 15-18 minutes or until the bialys are golden and set.
21.Remove from oven and let cool for a few minutes before serving warm or at room temperature.
