Ingredients

1 large fresh pineapple
1 glass white rum
coconut ice cream
4 egg whites
4 ounces caster sugar

Instructions

1.Preheat the oven to 350°F.
2.Cut off the top of the pineapple and set it aside. Use a sharp knife to cut a circle around the inside of the pineapple, leaving about half an inch from the edge. Use a spoon to scoop out the pineapple flesh and juice, being careful not to puncture the outside.
3.In a large bowl, whisk the egg whites until stiff peaks form. Gradually add in the caster sugar and salt, whisking continuously until the mixture is smooth and glossy.
4.Fold the pineapple flesh into the egg white mixture.
5.Pour the mixture into the pineapple shell and bake in the preheated oven for 25-30 minutes, until the top is golden brown.
6.Drizzle the white rum over the top of the baked mixture and return to the oven for a further 5 minutes.
7.Serve hot with a scoop of coconut ice cream on top.
