Ingredients

4 cups cooked rice
4 large boneless skinless chicken breasts ( boiled in chicken stock until done )

1 1/2 teaspoons ground cumin
1 tablespoon chopped garlic

1 can cream of chicken soup
1 can cream of mushroom soup
1 can cheese soup
1 can diced tomatoes with green chilies
1 can plain diced tomatoes
1 can sweet corn
1 can sliced mushrooms , drained
8 ounces sour cream
1 package shredded cheddar cheese

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.In a large bowl combine the rice, chicken, green pepper, onion, jalapeno, olives, chili powder, cumin, garlic, salt, pepper, cream of chicken soup, cream of mushroom soup, cheese soup, diced tomatoes with green chilies, plain diced tomatoes, sweet corn and mushrooms. Mix together and pour into a 9x13 inch baking dish.
3.Bake at 375 degrees F (190 degrees C) for 45 minutes. Remove from oven and top with sour cream and shredded cheese. return to oven for an additional 15 minutes or until cheese is melted and bubbly.
4.Remove from oven and let sit for 5 minutes before serving.
