Ingredients

2 lbs boneless pork butt , trimmed of excess fat and cut into 1-inch pieces
2 medium onions , 1 quartered and 1 chopped fine
5 medium garlic cloves , 3 peeled and smashed and 2 minced
4 sprigs fresh thyme
1 teaspoon salt
2 tablespoons olive oil
1/2 teaspoon dried oregano
1 can tomato sauce
1 tablespoon dried chipotle powder
2 bay leaves
3/4 cup vegetable oil
12 corn tortillas
salt

Instructions

1.Preheat the oven to 450°F.
2.In a large dutch oven, combine the pork, quartered onion, smashed garlic cloves, thyme, and salt. Add enough water to cover the pork.
3.Bring to a simmer over medium heat and cook until the pork is tender, about 1 hour.
4.Drain the pork, discarding the onion, garlic cloves, thyme, and bay leaves.
5.In a large skillet, heat the olive oil over medium-high heat. Add the chopped onion and minced garlic, and cook until softened.
6.Add the tomato sauce, chipotle powder, and oregano. Cook, stirring frequently, for 2 minutes.
7.Add the shredded pork to the skillet and stir to combine with the sauce. Cook until heated through, about 5 minutes.
8.Meanwhile, in a separate skillet, heat the vegetable oil over medium-high heat. Fry the tortillas until crispy, about 2 minutes per side. Drain on paper towels and sprinkle with salt.
9.To assemble the tostadas, spoon the pork mixture onto each tortilla. Serve immediately.
