Ingredients

8 ounces bacon , chopped
4 lbs beef chuck , cut into 1 1/2 inch chunks
salt & freshly ground black pepper
1 large onion , chopped fine
2 carrots , peeled and chopped fine
8 garlic cloves , minced
2 teaspoons chopped fresh thyme
4 tablespoons tomato paste
2 1/2 cups pinot noir wine
1 1/2 cups reduced-sodium chicken broth
1/3 cup soy sauce
3 bay leaves
3 tablespoons minute tapioca
3 tablespoons minced fresh parsley
8 ounces white pearl onions
8 ounces sliced button mushrooms
Beef burgundy, or boeuf bourguignon in French, is a classic dish that originates from the Burgundy region of France. This slow-cooker version is adapted from the test kitchen of America's Test Kitchen and features tender chunks of beef that are slow-cooked in a rich red wine sauce. The addition of bacon, pearl onions, and mushrooms adds depth of flavor and complexity to the dish, making it a true crowd-pleaser.

Instructions

1.Cook the bacon in a large skillet over medium heat until crisp, and then transfer to a slow cooker.
2.In the same skillet, season the beef generously with salt and pepper and cook in batches until well browned, then transfer to the slow cooker.
3.Add the onion, carrots, garlic, thyme, and tomato paste to the skillet and cook until the onion is softened. Transfer to the slow cooker.
4.Add the wine, chicken broth, soy sauce, and bay leaves to the slow cooker and stir gently to combine.
5.Cover and cook the beef until tender on low for 9-11 hours or on high for 6-8 hours.
6.In the last 30 minutes of cooking, stir in the tapioca and parsley. Then, sauté the pearl onions and mushrooms in a skillet until browned and add to the slow cooker.
7.Remove the bay leaves and adjust the seasoning with salt and pepper, as needed.
