1/2 teaspoon baking powder
1 1/2 ounces caster sugar
1/4 teaspoon salt
1 egg , beaten
2 ounces butter , melted
4 fluid ounces milk

Instructions

1.Preheat the oven to 200C/180C fan/gas 6.
2.Put the flour, baking powder, caster sugar and salt in a bowl with any flavourings (except chocolate) and zest, if using. Mix thoroughly.
3.Beat the egg lightly in a measuring jug, then add the melted butter and milk.
4.Fill a separate large bowl with boiling water, place the jug of wet ingredients in it and set aside for a few minutes until lukewarm. This will help the muffins to rise.
5.Pour the wet ingredients into the dry and stir gently until just combined. Do not overmix; a few lumps are fine.
6.Stir in the chocolate chips, if using.
7.Using a 2½in muffin scoop or 2 dessertspoons, divide the mixture between the muffin cases.
8.Bake for 18-20 minutes, or until risen, golden brown and firm. Leave the muffins in the tin for a few minutes, then transfer to a wire rack to cool.
