Ingredients

2 gallons water
1 1/2 cups salt
2 cups soy sauce
1/4 cup honey
1/4 cup molasses
1/2 cup sugar
2 pork , butts
salt & freshly ground black pepper , to taste
1 1/2 cups applewood chips , soaked
Western Carolina Style Pulled Pork BBQ is a beloved American dish. This classic BBQ recipe is made by slow-cooking pork in a flavorful brine, smoking it with applewood chips, and then shredding it into tender and juicy pieces. The sauce is a combination of tangy vinegar, tomato, and mustard, which perfectly balances the sweetness of the meat. Instructions

1.In a large container, mix together the water, salt, soy sauce, honey, molasses, and sugar until everything has dissolved.
2.Place pork butts in the mixture and let them brine in the refrigerator for at least 12 hours, and up to 24 hours.
3.Preheat your grill to 250°F. Remove the pork butts from the brine, and season with salt and freshly ground black pepper to taste.
4.Place the applewood chips in a smoker box and put it on your grill grates. Add the pork butts to the grill, and smoke for about 5 hours with the lid down.
5.After 5 hours, wrap the pork butts in aluminum foil, and continue to cook for another 2 hours, or until the internal temperature reaches 205°F.
6.Once done, take the pork butts off the grill and let them rest for 30 minutes before shredding them with a fork.
