Instructions

1.Preheat the oven to 300°F (150°C).

4.Gradually whisk in the cream mixture.
5.Strain the mixture through a fine mesh sieve into a measuring jug.
6.Place ramekins in a baking dish and pour the custard mixture into the ramekins.
7.Pour 1/2 inch of water into the baking dish, being careful not to get any in the ramekins.
8.Bake for 30-35 minutes or until the edges are set and the center slightly jiggly.
9.Remove the ramekins from the water and let cool.
10.Chill in the fridge for at least 2 hours or overnight.
11.Sprinkle a layer of sugar over the custards. Brulee with a blowtorch or under a broiler until sugar caramelizes.
