Instructions

1.Preheat oven to 180°C and grease a 20x20cm oven dish.
2.In a separate bowl, mix together 625ml of sugar, flour, baking soda, apricot jam, olive oil, vinegar, eggs, milk, and a pinch of salt until well combined.
3.Pour the mixture into the greased dish and bake for 45-50 minutes until golden brown and fully cooked through.
4.In a pot, heat up the water, butter, and 500ml of sugar until boiling point.
5.Once the pudding is fully baked, pierce it all over with a fork and gradually pour the hot syrup over it.
6.While the pudding soaks up the syrup, make the custard by heating the cream until boiling and then adding 250ml of the hot cream to a bowl with the egg yolks and amarula liqueur, whisking together until well combined.
7.Slowly pour the mixture back into the pot with the remaining hot cream, stirring continuously until the custard has thickened.
8.Serve the warm pudding topped with the custard and toasted almonds.
