Ingredients

3 chicken breasts

2 cups chicken stock
3 cups milk
1 red pepper , diced
1 tablespoon brown sugar

1 onion , diced
1/2 carrot , diced
1 stalk celery , diced
salt and pepper , to taste
1/4 cup toasted almond ( optional )
3 tablespoons chopped parsley ( optional )

Instructions

1.Coat chicken in seasoned flour and sauté in a pan with clarified butter until browned.
2.Add half cup of Amaretto and cook for 2 more minutes.
3.In a large pot, combine chicken stock, milk, diced red pepper, brown sugar, olive oil, onion, carrot, and celery. Bring to boil.
4.Add the remaining Amaretto and the chicken mixture. Simmer for 30 minutes.
5.Season with salt and pepper, and garnish with almonds and parsley (optional).
