Instructions

1.Dough: In a large bowl, combine flour and salt. Cut in butter and shortening until mixture is crumbly. Add lemon juice and ice water. Mix gently until a dough forms. Shape the dough into a disc, wrap it in plastic, and refrigerate for 30 minutes.
2.Preheat the oven to 375 F (190 C). Roll the dough out on a lightly floured surface to 1/8 inch (3 mm) thickness. Cut out 8 circles with a 4-inch (12-cm) round cutter. Place the circles on a lightly greased baking sheet.
3.Filling: In a small bowl, soak the raisins in 1/4 cup (60 mL) hot water for 10 minutes. Drain and set aside. In a medium saucepan, combine rum (or water), brown sugar, golden syrup, butter, and salt. Heat over medium-high heat until the mixture comes to a boil. Remove from heat and stir in the vanilla and raisins.
4.Assembly: Spoon the filling onto the center of each circle. Fold up the edges to create a butterfly shape. Brush the pastry with beaten egg. Bake for 20 minutes or until golden brown. Serve warm or at room temperature.
