Ingredients

1 eggplant
2 large potatoes , cut into 3/4 inch cubes
1/4 cup vegetable oil
3 teaspoons black mustard seed
1 medium onion , sliced
1/2 teaspoon chili powder
1 teaspoon ground dried turmeric
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons minced garlic
2 teaspoons minced fresh ginger root
2 teaspoons garam masala
2 teaspoons caraway seed
1/4 cup soy sauce

Instructions

1.Cut the eggplant into cubes and soak in salt water for 10 minutes.
2.After 10 minutes, rinse the eggplant with water and set aside.
3.Heat oil in a large pan over medium heat.
4.Once hot, add black mustard seeds to the pan.
5.Once the seeds start to pop, add sliced onion to the pan.
6.Cook the onion until it's soft and translucent.
7.Add chili powder, turmeric, cumin, coriander, minced garlic, minced ginger root, garam masala and caraway seed to the pan.
8.Stir well and let the spices cook for 1-2 minutes.
9.Add potato cubes to the pan and stir well to coat with the spice mixture.
10.Once the potato cubes are fully coated, add the eggplant cubes to the pan.
11.Stir well to coat the eggplant with the spice mixture.
12.Add soy sauce to the pan and cover with a lid.
13.Cook on low heat for 15-20 minutes or until the vegetables are fully cooked.
