Ingredients

6 medium baking potatoes
1/2 bunch chives
5 sprigs flat leaf parsley
1/2 bunch chervil
3 sprigs fresh tarragon
2 shallots ( or green onions )
creamed horseradish
1 lb cream cheese or 1 lb fromage blanc , at room temperature
Alsatian style baked potatoes and cheese, or bibbelskase, is a traditional dish from the Alsace region of France. This delicious side dish is made by baking potatoes until they are tender, then scooping out the flesh and filling the potato shells with a mixture of cream cheese, fresh herbs, and shallots or green onions. The potatoes are then baked again until the cheese is melted and golden. This dish is a popular way to enjoy potatoes in Alsace and is often served as part of a casual meal or as a side dish for a more formal occasion.

Instructions

1.Preheat the oven to 375°F.
2.Pierce each potato several times with a fork, then bake for about 45 minutes, or until tender.
3.While the potatoes are baking, finely chop the chives, parsley, chervil, tarragon, and shallots or green onions.
4.When the potatoes are done, slice them in half lengthwise and let them cool for a few minutes.
5.Scoop out most of the flesh from the potatoes, leaving about 1/4 inch of flesh in the skin.
6.In a bowl, mix the cream cheese or fromage blanc with the chopped herbs, shallots or green onions, and 1 tablespoon of horseradish.
7.Fill each potato half with a generous spoonful of the herb-cheese mixture.
8.Return the potatoes to the oven and bake for about 15 minutes, until the cheese is melted and golden.
9.Serve hot.
