Ingredients

1 lb chicken breast
1/8 lb deli ham , cut in 1/4 inch cubes ( I prefer Boar 's Head Sundried Tomato and Rosemary ham )
2 shallots , minced
3 ounces sliced baby portabella mushrooms
1 tablespoon olive oil
1/3 cup shredded gruyere or 1/3 cup emmenthaler cheese
Alsatian Stuffed Chicken Breasts is a delicious and easy-to-make main course recipe. The dish combines protein-rich chicken breasts with a savory stuffing made with ham, cheese, shallots, and mushrooms. Instructions

1.Preheat oven to 375 degree F.
2.Place a chicken breast between two pieces of plastic wrap and pound with flat side of meat mallet until 1/4” thick.
3.Remove plastic wrap and season chicken with salt and pepper.
4.In a skillet over medium heat, heat olive oil and cook minced shallots until they turn translucent, approximately 2 minutes.
5.Add sliced mushrooms and cook until soft, approximately 4-5 minutes.
6.Remove skillet from heat and add in chopped ham and shredded cheese, stirring to combine.
7.Place approximately 1/8 cup of stuffing mixture into center of flattened chicken breast.
8.Fold one side of chicken over stuffing mixture and then the other, forming a sealed roll.
9.Use toothpicks to secure roll, if necessary.
10.Place chicken roll into baking dish and repeat with remaining chicken breasts.
11.Bake chicken in preheated oven for approximately 35-40 minutes or until internal temperature of chicken reaches 165 degrees F.
