Ingredients

6 ounces shortcrust pastry ( i.e . made with 6 oz plain flour )
1 lb onion , thinly sliced
2 ounces unsalted butter
1 bay leaf
2 large eggs
grated nutmeg , to taste
150 ml double cream ( heavy )
150 ml milk
salt & freshly ground black pepper
Alsace onion flan, also known as tarte à l'oignon, is a classic French dish that originated in the Alsace region of France. Instructions

1.Preheat the oven to 375°F (190°C).
2.Place the shortcrust pastry on a lightly floured surface and roll out to fit a 7-inch (18 cm) quiche dish.
3.Line the quiche dish with the shortcrust pastry and use a fork to prick holes in the bottom.
4.Melt the butter in a frying pan over low heat and add the sliced onions and bay leaf. Cook for 20 minutes, stirring occasionally, until the onions are soft and caramelized.
5.In a medium bowl, beat the eggs and add the nutmeg and some salt and pepper. Mix well.
6.In another bowl, mix together the double cream and the milk.
7.Remove the bay leaf from the onions and spread them in the pastry case.
8.Pour the egg mixture over the onions and then top with the cream mixture.
9.Bake in the preheated oven for 35-40 minutes, or until the flan is set and the top is golden brown.
10.Serve warm or at room temperature.
