Ingredients

30 garlic cloves , peeled
1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/4 cup white wine vinegar ( if you can find it , champagne vinegar is wonderful )
salt & fresh ground pepper , to taste ( I like to use Kosher salt )
4 sprigs fresh oregano ( or 1/2 teaspoon dried oregano )

Instructions

1.In a small saucepan, heat olive oil over medium heat.
2.Add garlic cloves and cook for 5-8 minutes or until garlic turns golden brown.
3.Add lemon juice, vinegar, salt, fresh ground pepper, and oregano. Stir to combine.
4.Reduce heat to medium-low and let garlic marinate for 10 minutes.
5.Remove from heat and let garlic cool.
6.Serve as a condiment or add to your favorite dishes.
