Ingredients

1 lb firm-cooking potato , cut in approx . 3/4 inch cubes
3 cups salt water , boiling
1/2 lb macaroni
7 ounces heavy cream
1 teaspoon muscat wine ( can substitute port or Riesling )
black pepper , freshly ground , to taste
1/2 lb mountain cheese or 1/2 lb emmenthaler cheese , grated
unsalted butter ( for frying )
2 onions , cut in rings
2 tablespoons very fine semolina or 2 tablespoons flour

Instructions

1.Cook potatoes in salted water for about 15 minutes, or until tender. Drain and set aside.
2.In a large pot of boiling salted water, cook macaroni according to package instructions, about 8 minutes.
3.In a separate pot, bring the cream and wine to a simmer over low heat. Add black pepper and grated cheese, stirring constantly until cheese has melted.
4.Melt some butter in a pan and fry the onion until golden brown and almost translucent. Set aside.
5.Combine macaroni, potatoes, cheese sauce, and fried onion in a large serving dish. Sprinkle with semolina or flour, if desired. Broil in the oven until lightly browned on top.
