6 ounces fruit , dried bits
1 1/2 cups water
1 tablespoon lemon juice
2 1/2 tablespoons margarine
2 teaspoons cornstarch
1 tablespoon honey
6 tablespoons white flour
4 eggs
1 cup half-and-half
1 dash nutmeg

Instructions

1.In a small saucepan, combine dried fruit bits, water, and lemon juice. Cook on medium heat until tender and water is nearly absorbed, for about 10-12 minutes.
2.Melt 2 tablespoons margarine in a small saucepan over low heat. Mix in cornstarch and honey until smooth. Stir in cooked dried fruit bits; mix well. Set aside.
3.In a mixing bowl, beat together flour, eggs, always beating in first the egg yolk and then the whites, and half and half. Season with nutmeg.
4.In a skillet over medium heat, melt 1/2 tablespoon margarine. Pour in 1/4th of the egg mixture and cook for about 2 minutes, lifting edges occasionally to let unset eggs run onto the bottom of skillet until top surface looks set.
5.Spoon 1/4th of the fruit mixture over half of the omelet in skillet; fold other half over filling. Slide onto plate. Repeat with remaining margarine, egg mixture, and fruit mixture.
