Ingredients

1 lb fresh green beans or 1 lb frozen green beans , cut into French style
4 tablespoons butter or 4 tablespoons margarine
3/4 cup finely sliced onion
1 1/2 garlic cloves , minced
1/2 lb sliced mushrooms ( I use button )
1 cup sour cream
fresh ground black pepper , to taste
salt , to taste
2 1/2 cups swiss cheese ( Emmanthaler , Gruyere or Jarlsberg )
1/3 cup dried breadcrumbs

Instructions

1.Preheat oven to 375°F (190°C).
2.Cook green beans in a pot of salted boiling water until crisp-tender, about 5-7 minutes.
3.Remove beans from water and shock in a bowl of ice water to stop cooking.
4.Melt 2 tablespoons of butter in a large skillet over medium heat.
5.Add onions and cook until soft and translucent, about 5 minutes.
6.Add garlic and mushrooms and cook until mushrooms are softened and browned, about 5-7 minutes.
7.Stir in sour cream and season with salt and pepper.
8.In a separate bowl, mix together the Swiss cheese and breadcrumbs.
9.Add the green beans to the skillet and toss to coat with the mushroom and sour cream mixture.
10.Pour the green bean mixture into a 9x13-inch baking dish.
11.Sprinkle the Swiss cheese mixture over the top of the green beans.
12.Cut the remaining 2 tablespoons of butter into small pieces and sprinkle over the cheese.
13.Bake for 25-30 minutes or until bubbly and golden brown on top.
