1 cup bamboo shoot

Instructions

1.Soak the black-eyed peas in water overnight.
2.Boil the bamboo shoots in a pot for 10 minutes and then drain the water.

4.Cut the tomatoes into small cubes and chop the onion, gingerroot, and green chili.
5.Heat the corn oil in a pan and fry the onion, gingerroot, and green chili.
6.Add the sliced potato and fry for 5 minutes.
7.Add the cumin powder and turmeric powder and fry for 1 minute.
8.Add the black-eyed peas and mix well.
9.Add the boiled bamboo shoots and mix well.
10.Add salt to taste, cover the pan, and cook for 10-15 minutes on medium heat.
11.Once the potato is cooked, add the cubed tomatoes and mix well.
12.Turn off the heat and let the curry rest for a few minutes.
13.Fry the bori in a separate pan until crispy and golden brown.
14.Garnish the curry with fried bori and serve hot with steamed rice.
