Ingredients

4 cloves garlic
1 piece fresh ginger
2 tablespoons vegetable oil
2 bay leaves
1 piece cinnamon stick
1 teaspoon coriander seeds
6 whole black peppercorns
4 pods green cardamom

1 large onion , minced
1 1/2 teaspoons salt , divided
1 green chile pepper , cut into matchsticks
2 tomatoes , diced
1/2 cup water , if needed ( optional )
2 teaspoons chili powder
1 teaspoon ground cumin
2 tablespoons butter
1 teaspoon ground fenugreek ( menthi powder )
1 russet potato , cut into 1/2-inch cubes
1/2 pound paneer , cut into 1/2-inch cubes
1/2 cup frozen peas
2 teaspoons honey
Aloo matar paneer is a traditional North Indian dish that combines potato, peas, and paneer in a rich, creamy, and spicy sauce. This dish is a staple in Indian households and is often served with rice or naan. The combination of potatoes and paneer creates a hearty and satisfying meal that can be enjoyed at any time of the day.

Instructions

1.In a mortar and pestle, grind together the garlic and ginger until they form a paste.
2.Heat the vegetable oil in a large, heavy-bottomed pot over medium-high heat.
3.Add the bay leaves, cinnamon stick, coriander seeds, black peppercorns, cardamom pods, and cloves. Fry for 30 seconds until fragrant.
4.Add the minced onion and 1 teaspoon of salt to the pot. Cook, stirring occasionally, for 10 minutes until the onions are golden brown.
5.Add the garlic and ginger paste and the green chile pepper to the pot. Cook for 2 minutes more.
6.Add the diced tomatoes, chili powder, and cumin to the pot. Cook for 5 minutes until the tomatoes have broken down and the mixture has thickened.
7.Add the butter, fenugreek powder, and 1/2 teaspoon of salt to the pot. Cook for 1-2 minutes until the butter has melted and the spices are fragrant.
8.Add the cubed potatoes and paneer to the pot. Stir to coat in the spice mixture. Add enough water to just cover the potatoes and paneer. Cover the pot and simmer for 20 minutes until the potatoes are tender.
9.Add the frozen peas and honey to the pot. Stir to combine and cook for 2-3 minutes until the peas are heated through.
10.Serve the aloo matar paneer hot with rice or naan.
