Ingredients

4 big potatoes
1 onion , finely chopped
5 -6 green chilies , chopped
1/2 cup cilantro leaf , chopped
4 teaspoons masala or 2 teaspoons red chili powder
1 teaspoon onion seeds ( kalongi )
1 teaspoon jeera powder ( Cumin powder )
1 teaspoon fresh grated ginger ( optional )
1 tablespoon lemon juice ( optional )
salt
1 cup white flour
1 teaspoon sea salt
2 tablespoons oil
1 pinch baking soda
water , for making the batter

Instructions

1.Peel and grate the potatoes into a large bowl.

3.In a separate bowl, mix together the white flour, salt, oil, and baking soda. Add enough water to form a smooth batter.
4.Heat oil in a deep frying pan over medium heat.
5.Take a small amount of potato mixture in your hands and shape it into a small, flat patty or tikiya.
6.Dip each tikiya into the batter, then carefully place it into the hot oil.
7.Fry the tikiyas until they turn golden brown on both sides, then remove them from the oil using a slotted spoon and place them on a paper towel to drain excess oil.
