Ingredients

1 lb potato , peeled , cubed
3 ounces sesame seeds
4 large hot green chili peppers
2 garlic cloves
1 teaspoon minced ginger
1 tablespoon fresh cilantro , minced
4 lemons , juice of
salt
2 tablespoons mustard oil or 2 tablespoons vegetable oil
1 teaspoon fenugreek seeds
lettuce leaf , as needed

Instructions

1.Boil the potatoes in salted water until tender. Drain and let cool.

3.Grind the roasted sesame seeds in a spice grinder or mortar and pestle.
4.In a large bowl, mix together the ground sesame seeds, minced garlic, minced ginger, chopped cilantro, lemon juice, and salt.
5.Heat the mustard oil in a small skillet over medium heat until hot. Add the fenugreek seeds and fry until they turn brown, about 30 seconds.
6.Add the fried fenugreek seeds to the bowl along with the sliced green chilies and potato cubes. Toss well to combine.
7.Serve Aloo Achar on lettuce leaves.
