Ingredients

6 slices bacon , cut into lardons
1 1/2 lbs round steaks , flatiron , flank steak , butterflied open if necessary ( by you or your butcher )
salt , to taste
fresh ground pepper , to taste
2 tablespoons Dijon mustard
1 1/2 large yellow onions , diced , divided
2 tablespoons dill pickle relish
1 -2 tablespoon vegetable oil , as needed , if not enough bacon fat rendered , I did not use
1 large carrot , peeled and chopped
1 stalk celery , chopped
2 garlic cloves , minced
1/4 cup red wine
1 cup beef stock , broth
1 can diced tomatoes , with juice

Rouladen is a classic German dish made of thinly sliced beef that is rolled up and filled with various ingredients, then slow-cooked in a flavorful sauce. This recipe is a twist on my grandmother's rouladen, adding bacon and pickle relish to the classic onion filling. It brings a unique flavor combination that is incredibly delicious. Instructions

1.Preheat the oven to 350 degrees F.
2.Cook the bacon in a large skillet until crispy, then remove and set aside.
3.Season the steaks with salt and pepper, then spread the Dijon mustard on one side of each steak.
4.Sprinkle half of the diced onions, bacon lardons, and pickle relish on top of the mustard.
5.Roll up the steaks and secure with kitchen twine.
6.Heat the vegetable oil in the same skillet used for the bacon. Brown the steaks on all sides, then remove and set aside.
7.Add the remaining onions, carrot, celery, and garlic to the skillet and cook until soft.
8.Pour in the red wine and beef broth and bring to a boil, scraping any browned bits from the bottom of the skillet.
9.Add the diced tomatoes and their juice, then return the steaks to the skillet and spoon the tomato mixture over the top.
10.Cover the skillet and bake in the preheated oven for 1 1/2 hours, or until the steaks are tender.
