Ingredients

3 cups ground blanched almonds
2 cups sugar
1 cup water
3 tablespoons rose water or 1 tablespoon vanilla extract
1 tablespoon lemon juice
1 lb phyllo pastry
1 1/2 cups unsalted butter , melted , for brushing phyllo
confectioners ' sugar , for topping
Almond Triangles (Trigona) are a traditional Greek pastry that are popular during special occasions such as weddings and Easter. They are made with a sweet almond filling that is encased in crispy phyllo pastry layers. The filling is sweetened with sugar and flavored with either rose water or vanilla extract to give it a fragrant aroma and flavor. These sweet treats are perfect for snacking and can be enjoyed on their own or served alongside a cup of tea or coffee.

Instructions

1.Preheat your oven to 160°C.
2.In a medium saucepan, combine the sugar and water and bring to a boil over medium heat.
3.Reduce the heat to low and stir in the ground almonds, rose water or vanilla extract, and lemon juice.
4.Cook the mixture, stirring constantly for about 10 minutes or until it becomes a thick paste.
5.Remove the mixture from the heat and let it cool completely.
6.Lay a sheet of phyllo pastry on a large work surface and brush it lightly with butter.
7.Repeat with 7 more sheets of phyllo pastry, brushing each one lightly with butter as you layer.
8.Cut the stacked sheets of phyllo into 3 equal strips, and then cut each strip diagonally into triangles.
9.Place about 1 teaspoon of the almond filling onto the center of each triangle.
10.Fold one corner of the triangle over the filling to the opposite corner, enclosing the filling and forming a sealed triangle.
11.Place the triangles onto a greased baking tray and brush them with the melted butter.
12.Bake for 20-25 minutes or until the triangles are golden brown in color.
13.Remove them from the oven and dust with confectioners' sugar before serving.
