Ingredients

1 lb ground pork

8 ounces breadcrumbs ( I used Fresh Gourmet organic croutons )
1 tablespoon chili powder
1 onion
4 garlic cloves
1 large carrot
1 orange bell pepper
1 cup flat leaf parsley
8 -10 pieces bacon
3 eggs
A.1 . Original Sauce
1 1/2 cups ketchup ( honestly i might have used more )
texas pete
1 tablespoon Dijon mustard
1 tablespoon dark brown sugar
sea salt ( I used iodized sea salt )
fresh ground pepper

Instructions

1.Preheat the oven to 375°F.
2.In a large mixing bowl, combine the ground beef, veal, and pork together.
3.Add the breadcrumbs, chili powder, and salt, stir until well combined.
4.In a food processor, pulse the onion, garlic, parsley, bell pepper, and carrot until chopped finely. Add to the meat mixture.
5.Crack the eggs into the mixing bowl and pour A.1. Original Sauce, ketchup, Texas Pete hot sauce, Dijon mustard and brown sugar over the top.
6.Mix all ingredients together with your hands, ensuring everything is evenly incorporated into the meat mixture.
7.On a large baking sheet, form the meat mixture into a loaf shape, wrap the whole thing with bacon, and bake for about 1 ½ hours or until the internal temperature of the meatloaf is 160°F.
