All American Chicken Fried Steak With Cream Gravy is a classic Southern dish that has been enjoyed for generations. It is said to have originated in Texas, but has since spread throughout the United States. Despite its name, the dish is not made with chicken, but rather with cubed steak that has been tenderized and battered before being fried until crispy. It is served with a rich and creamy cream gravy that is made with onions, garlic, flour, broth, and milk. The dish is typically served with mashed potatoes and a vegetable, making it a hearty and filling meal that is perfect for any occasion.

Instructions

1.Preheat oven to 250°F. Set a wire rack on a rimmed baking sheet.
2.In a large bowl, whisk together flour, 2 teaspoons salt, 1/2 teaspoon black pepper, and cayenne pepper.
3.In a medium bowl, whisk together buttermilk, egg, baking powder, and baking soda.
4.Dredge steaks in flour mixture, shaking off excess, then dip in buttermilk mixture, letting excess drip off. Dredge again in flour mixture, tapping off excess.
5.In a large cast-iron skillet, heat 1 inch of oil to 325°F over medium-high heat. Add steaks (you will need to do this in batches) and cook until golden brown and cooked through, about 3 minutes per side. Transfer to wire rack and keep warm in oven.
6.Pour off all but 1/4 cup oil from skillet. Add onion and thyme and cook until onion is just softened, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Sprinkle 3 tablespoons flour over onion mixture and cook, whisking constantly, for 1 minute. Slowly whisk in broth and milk and bring to a simmer. Cook, whisking frequently, until thickened, about 10 minutes. Stir in remaining 1/2 teaspoon salt, 1/4 teaspoon pepper, and cayenne pepper.
7.Serve steaks with gravy.
