3 large Yukon Gold potatoes , peeled and cubed
1 medium head cauliflower , chopped into bite size pieces
1 can garbanzo beans , drained
2 tablespoons garam masala

Instructions

1.Heat olive oil in a large skillet over medium heat.

5.Add coriander, salt, turmeric, cayenne pepper, cinnamon, ginger, and cardamom to the skillet.
6.Mix well and continue to cook for another 2-3 minutes.
7.Put potatoes, cauliflower, and garbanzo beans in a large pot.
8.Pour the sauce from the skillet into the pot over vegetables and add garam masala.
9.Cover the pot with a lid and cook for 30-45 minutes, stirring occasionally, until vegetables are tender.
