Ingredients

7 tablespoons olive oil
1/2 cup fresh cilantro , chopped with heavy stems removed

3 inches gingerroot , peeled and chopped

2 lbs fish steaks ( firm white meat )
fresh ground black pepper , to taste
4 ripe plum tomatoes , halved lengthwise
1 medium onion , diced
1 red bell pepper , diced
1 green bell pepper , diced
2 cups eggplants , diced
1/4 cup pitted black olives ( Moroccan preferred )
cilantro leaf , chopped ( garnish )

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a food processor, combine the cilantro, garlic, ginger, cumin, coriander, anise, cayenne pepper, salt, and lemon juice. Process until a paste is formed.
3.Place the fish steaks in a large bowl and season with salt and black pepper. Then, spoon the spice paste over the fish, making sure to coat all sides evenly.
4.In a large Dutch oven or oven-safe pot, heat the remaining olive oil over medium heat. Add the tomatoes, onions, and bell peppers and sauté until the vegetables are slightly softened, about 5 minutes.
5.Add the eggplant and olives to the pot, then arrange the fish on top. Pour any remaining spice paste over the fish. Cover the pot and transfer to the oven.
6.Bake for about 30 minutes, until the fish is cooked through and the vegetables are tender. Serve hot, garnished with chopped cilantro leaves.
