1 potato , small diced cubes
1 green bell pepper , diced
1 red bell pepper , diced
1 yellow bell pepper , diced , if not using add more red and green bell pepper ( optional )
1 -2 chili pepper , for those that like heat ( optional )
1 cup water
kosher salt
fresh ground pepper
4 eggs
parsley or cilantro , chopped
black olives ( optional )
capers ( optional )

Instructions

4.Add diced green, red, and yellow bell peppers (if using), chili pepper (if using), and a cup of water.
5.Cover and cook for 10-15 minutes or until vegetables are fully cooked and have a thick sauce consistency.
6.Add salt and fresh ground pepper to taste.
7.Crack eggs into the pan and cover with a lid, cook for 5-7 minutes or until the eggs are poached.
8.Garnish with chopped parsley or cilantro, black olives (optional), and capers (optional). Serve hot with warm crusty bread or pita.
