Ingredients

4 onions
2 tablespoons concentrated tomato puree
2 green peppers ( the very large Algerian mildly hot peppers )
2 tablespoons olive oil
salt & pepper
1 hot pepper ( optional )
500 g fine semolina
250 g plain flour
salt
water
Algerian M'hajeb is a popular snack in Algeria, and can be found in any street food corner. These pastries are made with semolina and plain flour dough and filled with onions, green peppers, hot pepper if desired, and tomato puree. Instructions

1.In a large bowl, add the fine semolina, plain flour and salt. Mix well.
2.Gradually add the water and knead well until a smooth dough is formed.
3.Cover with a wet cloth and let it rest for 20 minutes.
4.In a pan, sauté the onions and green peppers in olive oil until soft. Add the tomato puree, salt, pepper, and hot pepper if desired. Simmer for a few minutes.
5.Divide the dough into equal portions and roll each one out into a circle.
6.Fill each circle with the sautéed onion and pepper mixture and fold over onto itself.
7.Bake in a preheated oven at 200 degrees Celsius for 15-20 minutes until golden brown.
