Ingredients

3 1/2 cups fine semolina ( my cups hold 12oz , fluid )
1 1/4 cups strong white bread flour
2 cups water , room temp . plus extra
4 fluid ounces sunflower oil ( or vegetable , canola etc . )
7 g fast action yeast
1 large egg , beaten
2 teaspoons sugar
2 teaspoons salt
2 large egg yolks , beaten
2 -3 tablespoons sesame seeds
1 tablespoon nigella seeds ( optional )
Algerian Khobz El Dar, also known as semolina bread, is a traditional bread that is enjoyed in Algerian cuisine. Instructions

1.In a large bowl, mix together the semolina flour and white bread flour.
2.In a separate bowl, mix together the yeast, sugar, and 1/2 cup of warm water. Let sit for 5 minutes.
3.Add the oil, egg, and salt to the yeast mixture and mix well.
4.Pour the yeast mixture into the bowl with the flour and mix well. Add in enough warm water to make a soft dough.
5.Knead the dough until smooth and elastic, about 10-15 minutes.
6.Cover the dough and let it rise for 1 hour.
7.Preheat the oven to 400°F (200°C). Punch down the dough and divide it into 2 pieces. Shape each piece into a round loaf.
8.Place the loaves onto a baking sheet. Brush with egg yolk and sprinkle sesame seeds and nigella seeds on top.
9.Bake for 25-30 minutes, or until golden brown. Let cool before slicing and serving.

PROS
