Ingredients

2 cups green lentils
1 onion , finely chopped
3 garlic cloves , minced
1 carrot , grated
1 courgette , grated
1 teaspoon dried mint
1 teaspoon ras el hanout spice mix
olive oil , to fry
2 pints water
1 lamb stock cube or 1 beef stock cube
salt & pepper
1/2 teaspoon bicarbonate of soda ( if not soaking lentils )
4 pieces lamb or 4 pieces chicken , enough for your family
1/2 teaspoon tomato puree ( or paste )

Instructions

1.Rinse green lentils and soak them in water overnight or for 2-3 hours.
2.In a deep pot, heat the olive oil and fry the onions and garlic until tender.
3.Add the grated carrot, courgette, and tomato paste. Fry for another 2 minutes.
4.Add the ras el hanout, dried mint, salt, and pepper.
5.Pour in the water, stock cube, and soaked lentils.
6.Finally, add the bicarbonate of soda and the lamb or chicken. Simmer for about 45 minutes, stirring occasionally.
7.Serve hot and enjoy!
