2 kg Greek yogurt
3 cucumbers ( medium sized )
4 garlic cloves , minced
1 1/2 teaspoons salt
Alfred's Iranian Yoghurt and Cucumber Dip, also known as Mast-o-Khiar, is a traditional Persian recipe that is popular throughout the Middle East. Instructions

1.Peel the cucumbers and grate them in a large bowl.
2.Add salt and mix thoroughly. Transfer grated cucumber into a colander and stir occasionally for circa 30 minutes to drain excess water.
3.In a separate large bowl, mix the minced garlic with the yogurt and refrigerate for at least 1 hour.
4.Add the cucumber to the yogurt mix and refrigerate for another hour before serving.
