Instructions

1.Cook pasta according to package directions.
2.While pasta is cooking, heat olive oil in a skillet over medium heat, add prosciutto and cook until crispy, about 5-7 minutes.
3.Add onion, oregano, and pepper flakes to the skillet and cook for another 3-4 minutes until onion is softened.
4.In a small bowl, combine beaten egg and parmesan cheese.
5.Drain pasta and add it to the skillet with the prosciutto and onion mixture while it's still hot.
6.Quickly pour the egg and cheese mixture over the pasta and toss everything together until coated. The heat from the pasta will cook the egg.
7.Garnish with chopped parsley and additional parmesan cheese if desired.
