Ingredients

3 -4 lbs corned beef brisket ( with spice packet , if included )
1 lb carrot , peeled and cut into 3-inch lengths
1 -2 bottle amber ale
3/4 lb Brussels sprout ( ends trimmed )
1/2 cup sour cream
2 tablespoons whole grain mustard
1 tablespoon chopped fresh tarragon
This hearty dish of Ale-Braised Corned Beef, Brussels Sprouts, and Carrots is a classic comfort food that's perfect for a chilly evening. Corned beef is a flavorful cut of meat that has been cured with salt and spices. Braising the beef in ale infuses it with a rich, complex flavor that pairs well with the sweetness of the carrots and the bitterness of the Brussels sprouts. Instructions

1.Preheat oven to 325 degrees F (165 degrees C).
2.Cut beef into serving-sized pieces and place in a large Dutch oven or covered casserole dish. Add enough ale to cover the beef. Add carrots and 1/2 cup water.
3.Cover tightly, and bake 2 1/2 hours. With a slotted spoon, remove beef and carrots to a serving platter. Keep warm.
4.Add Brussels sprouts to the casserole and enough pan cooking liquid to half cover them. Cover and simmer over low heat until tender, about 40 minutes. Remove sprouts from pan and keep warm.
5.In a small bowl, whisk together sour cream, mustard, and tarragon. Stir into the cooking liquid, and heat until hot and thickened.
6.Spoon sauce over meat and vegetables.
