1/4 cup white rice ( uncooked )
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
4 medium potatoes ( peeled )
1 bag baby carrots ( you 'll probably only use half )

Instructions

1.In a large bowl, combine the ground beef, uncooked white rice, ground cumin, salt, and pepper. Mix well and form into approximately 12 meatballs.
2.Cut the peeled potatoes into 1-inch cubes and arrange them in a single layer on the bottom of a large pot.
3.Add the half bag of baby carrots to the pot, on top of the potatoes.
4.Arrange the meatballs on top of the carrots, making sure they are evenly spaced and not touching.
5.Add enough water to the pot so that the liquid level reaches halfway up the meatballs.
6.Bring the pot to a boil, then reduce heat to medium-low and let simmer for 30-40 minutes, or until meatballs are fully cooked and potatoes are tender. Serve hot.
