Ingredients

6 -8 apricots ( but have some extra ones ready )
80 g amaretti cookies
80 g sugar
1 egg yolk
1/4 cup Amaretto
1/3 cup white wine
butter , for greasing
12 blanched almonds

Instructions

1.Preheat your oven to 375°F (190°C).
2.Grease a large baking dish with butter.
3.Cut the apricots in half and discard the pit.
4.Place the apricot halves with the cut side up in the baking dish.
5.Crush the amaretti cookies in a bowl until they form a coarse crumb.
6.In another bowl, mix the sugar with the egg yolk.
7.Add the amaretti crumbs, Amaretto, and white wine to the sugar mixture. Stir until well combined.
8.Spoon the mixture over each apricot half.
9.Scatter the blanched almonds over the top of the apricots.
10.Bake the apricots in the preheated oven for 20-25 minutes until they are golden brown and the almonds are toasted.
11.Serve the baked apricots warm, with a dollop of whipped cream or vanilla ice cream on top if desired.
