Ingredients

500 g basmati rice
1 medium roasting chicken
1 kg black cherries ( or cherry )
1 kg sugar
2 medium onions
1/2 teaspoon saffron
cooking oil
salt
black pepper
Albaloo Polow is a popular Persian dish often enjoyed during special occasions like weddings and gatherings. Instructions

1.Rinse and soak the basmati rice in cold water for 2 hours.
2.Wash the chicken and place it in a large pot with water, chopped onions, salt, and black pepper. Boil it until cooked and remove from the pot.
3.Remove the seeds of the cherries and rinse them well.
4.In a separate pot, add the cherries along with sugar and a cup of water. Cook until the cherries soften.
5.Mix 1/2 of the cooked rice with saffron and a tablespoon of cooking oil.
6.In a large non-stick pot, add a layer of the mixed rice, followed by a layer of cherries and chicken, and then another layer of plain rice. Repeat until everything is used up.
7.Cover the pot and cook over medium heat until the rice is cooked and the bottom is crispy.
