Ingredients

1 kg chicken piece
500 g basmati rice
2 dried limes , finely chopped
250 g fresh tomatoes
250 g onions , peeled and diced
50 g garlic cloves , peeled and finely diced
1/2 teaspoon salt
1 tablespoon fresh coriander , chopped
50 ml olive oil
2 tablespoons kabsa spice mix ( OR use the following spices , 1 teaspoon cardamom seed , 1 teaspoon black pepper , 1 teaspoon cumin )
250 g fresh tomatoes
100 g of fresh mint , leave
5 g salt
50 g green chili peppers
water
Al Kabsa is a traditional Arabian dish that has been enjoyed for centuries. It is a classic example of Arabian comfort food and is perfect for gatherings and events. The dish is characterized by aromatic basmati rice that is flavoured with a unique blend of spices including cinnamon, cardamom, cumin and black pepper. The rice is then combined with tender, juicy chicken in a tomato-based sauce. The dried lime adds a tangy and slightly bitter note that rounds out the flavours. Overall, Al Kabsa is a must-try dish for anyone who loves hearty and flavourful cuisine.

Instructions

1.Rinse the basmati rice in cold water until the water runs clear then leave it to soak for 30 minutes.
2.Preheat the oven to 200°C (180°C fan) gas mark 6.
3.In a large, deep pot or oven-safe casserole dish, heat the olive oil over medium-high heat. Add the chicken pieces and cook until golden brown, about 10 minutes. Remove the chicken from the pot and set it aside on a plate.
4.In the same pot, sauté the onions, garlic and tomato until they become soft and the onions are slightly caramelized, about 5 to 10 minutes.
5.Add your kabsa spice mix or the individual spices(cardamom, black pepper and cumin) to the pot and stir well.
6.Add 1 1/4 litres of boiling water, tomatoes, half of the mint leaves and the dried limes to the pot and bring to a simmer.
7.Return the chicken to the pot and sprinkle the remaining mint leaves on top. Cover the pot and put it in the oven to cook for 30 minutes.
8.Drain the soaked rice and add it to the pot, then cover and place the pot back in the oven for another 30 minutes.
9.To serve, fluff the rice with a fork and garnish with fresh coriander leaves, tomatoes, mint leaves and green chili peppers. Enjoy!
