Ingredients

1 1/2 lbs chicken thighs
1 tablespoon olive oil
1 lb potato , cut into large dice
3/4 lb yucca root or 3/4 lb yukon gold potato , cut into large dice
1 ear of corn , cut into 1 inch rounds
4 cups chicken stock ( try Bold Rotisserie Chicken Flavor )
1 medium onion , chopped
3 garlic cloves , minced
1 cup water
1/4 cup heavy cream
1 tablespoon capers ( heaping )
1 teaspoon cayenne pepper ( optional )
salt & freshly ground black pepper
cilantro , for garnish ( optional )

Instructions

1.Brown the chicken thighs in a large dutch oven or soup pot with olive oil over medium high heat for 3-4 minutes on each side until golden brown. Remove from pot and set aside.
2.In the same pot, sauté the onion and garlic until softened, about 5 minutes.
3.Add in the chicken stock, water, corn, yucca root, and potato. Bring to a boil, then reduce heat to medium low and simmer until potatoes are tender, about 30 minutes.
4.Remove chicken thighs and shred meat into bite-size pieces. Return shredded chicken to pot and add capers, and optional cayenne pepper, salt & pepper to taste.
5.Simmer for another 5-10 minutes then remove from heat. Stir in heavy cream and serve hot with cilantro garnish if desired.
